Lemon pepper & Honey Salmon w/ Pomegranate salad. Salad series EP.1 Bringing you feel good FLAVA light recipes to get you ready for summer 💪🏾
- 4 skinless salmon fillets.
- 2 tbsp. Olive oil
- 1 tsp sea salt
- 1 tsp. Lemon pepper seasoning
- 1 tbsp. Garlic powder
- 1 tbsp. All purpose
- 1 tbsp. Chilli powder
- 1 tbsp. Honey
Salad
- 1/2 cucumber
- 1 red onion sliced
- 8 cherry tomatoes halved
- 150g Rocket leaves
- 100g pomegranate seeds
Dressing
- 2 tbsp. Extra virgin olive oil
- 50ml Lemon juice
- 1 tbsp. Honey
- 1 tsp Chilli flakes
- 1 tsp. Dried parsley
- 1 tsp. Lemon pepper
- Cut up Salmon into bite sized pieces then add olive oil and massage. Season with seasonings above then place in air fryer for 15-20 mins at 200 degrees.
- For the salad add cucumber, red onion and tomatoes to rocket leaves with some olive oil then mix together with hands.
- To make the dressing add olive oil, lemon juice, honey, chilli flakes, dried parsley and lemon pepper seasoning to a small bowl and mix together.
- Plate up your salad on a bowl, then add salmon on top and drizzle dressing over salmon and salad then enjoy!
