Shrimp salad bowl – A Caribbean / South American fusion that will make you feel good

300g Large shrimp
1 tsp. Sea salt
1 tsp coarse black pepper
1 tbsp. garlic powder
1 tbsp. Paprika
1 tsp dried thyme
2 tbsp. Olive oil
1 red onion sliced
2 spring onions sliced
150g Mango chunks diced
1 large tomato diced
Juice of half a lime
1 avocado
2 tbsp. Sour cream
1 tbsp. Chilli powder
1/2 tsp. Dried parsley
Ripe plantain
1 cup Sweetcorn

Wash and devein your prawns and season with above seasonings.

In a frying pan add olive oil on medium heat and cook prawns for 3 minutes on each side until cooked.

Prep red onions, spring onions, mango, tomatoes, lime juice and assemble to together to make salsa.

For the guacamole add 1 avocado and mash together. Add olive and and lime juice and mix

For sour cream dressing add sour cream to a bowl with chilli powder and paprika then whisk until smooth.

Assemble bowl with lettuce, sweetcorn, mango salsa, guacamole, plantain, shrimp and the delicious sour cream dressings.
